Am I the only one who is tired of cooking these days?! I swear, if I have to pull my Instant Pot, CrockPot, or skillet out again I’m going to go crazy, LOL! Thank goodness Fashion Show Las Vegas has a ton of options to enjoy including dining in and to-go! To give myself a much-needed break from the kitchen, my little sister, Cailyn, and I recently headed to Grimaldi’s Pizzeria inside Fashion Show for lunch to enjoy their delicious coal-fired brick-oven pizza plus a variety of other fresh options!

We started our lunch with literally the freshest Mediterranean Salad filled with crisp romaine lettuce and cucumbers, savory tomatoes, kalamata olives, feta cheese, red onion, and a tangy vinaigrette dressing. I was excited to learn that the greens for Grimaldi’s salads are prepped twice daily as opposed to once a day to provide that fresh taste all day long!

Next up was the Bruschetta Trio including the Classic Tomato & Basil, Marinated Artichoke, and both Cailyn and my favorite, the Marinated Mushroom & Roasted Red Pepper! The flavor of the mushroom bruschetta has so much depth and layers that we both said we could literally eat it all on its own.

For a pizza, we decided to do half Margherita – traditional pizza with extra Famous Sauce and fresh basil – and half The Don – topped with Italian sausage, meatballs and pepperoni. The sauce on both sides was so delicious as we found that the tomatoes used for it are imported straight from Italy. What I loved most was despite all the meat from The Don, the pizza still wasn’t greasy yet still had so much flavor. Plus, the dough has that fresh coal-fired taste straight from the brick oven.

We ended our meal with a slice of the Strawberry Cheesecake. You could tell this cheesecake wasn’t just mass produced. It was creamy yet firm, filled with pieces of fresh strawberries and was not overly sweet. Unlike many other restaurants, it is carefully made fresh and in house. Although our bellies were full, it was a nice way to end our lunch.

Overall, it was an awesome lunch and much needed escape from cooking in the kitchen! Not only is it is a great family friendly spot but it’s also a nice place to relax and grab a bite when you are taking a break from shopping or walking the Strip in the Las Vegas heat.
